We don't know about you, but our sweet tooth comes on especially strong on Fridays. Luckily for us in Chicago, NoMI Kitchen's own Pastry Chef Meg Galus has us covered.
The exciting news: Meg has been nominated for FOOD & WINE magazine's first ever The People's Best New Pastry Chef award! The new honor is an expansion of the Best New Chef award FOOD & WINE has given to the country's most promising cooks for the past 24 years.
While the magazine editors choose the 50 pastry chefs for the three regions, the dining public determines The People's Best New Pastry Chef winners by voting online. We need your help! Now through February 14, vote for Chef Meg at foodandwine.com/the-peoples-pastry.
Three Best New Pastry Chef regional winners will be announced on foodandwine.com this month, and the overall winner will be featured in the May issue of FOOD & WINE.
To thank you in advance and satisfy the end-week craving, Meg shares her recipe for date butterscotch, yummy with ice cream or spread on brioche or pound cake.
Ingredients:
- 208 g brown sugar
- 147 g corn syrup
- 57 g butter
- 106 g cream
- 5 g vanilla extract
- 5 g bourbon
- 600 g pitted dates
- 100 g water
Directions:
- Cook the brown sugar, corn syrup and butter to 280 degrees F.
- Take off the heat and add the cream, vanilla and bourbon.
- Roughly chop the dates.
- Cook the dates and the water, stirring constantly, until the dates break down.
- Combine the butterscotch and dates, and stir to combine.
